  • 1 lb beets, peeled and cubed
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 400°F.
  2. Toss vegetables with olive oil, salt, and pepper.
  3. Spread vegetables on a baking sheet in a single layer.
  4. Roast for 25 minutes.
  5. Mix balsamic vinegar and honey in a bowl.
  6. Drizzle glaze over vegetables and toss to coat.
