- 8 oz rice noodles
- 1 lb chicken breast, sliced
- 2 tbsp gluten-free soy sauce
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp sesame oil
- 2 green onions, chopped
- 1 tsp red pepper flakes (optional)
- Cook rice noodles according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add chicken and cook until no longer pink.
- Add garlic, ginger, and red pepper flakes. Stir for 1 minute.
- Toss in bell pepper, carrot, and broccoli. Cook for 3-4 minutes.
- Pour in gluten-free soy sauce and sesame oil. Stir well.
- Add cooked rice noodles and toss until evenly coated.
- Top with chopped green onions before serving.
Notes
- Use tamari for a gluten-free soy sauce alternative.
- Adjust spice level by adding more or less red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
