  • 1/2 cup cold butter, cubed
  • 46 tbsp ice water
  • 3 eggs
  • 1 cup brown sugar
  • 1 cup corn syrup
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups pecans

Instructions

  1. Preheat oven to 350°F.
  2. Mix gluten-free flour and salt in a bowl.
  3. Cut in cold butter until crumbly.
  4. Add ice water, 1 tbsp at a time, until dough forms.
  5. Press dough into a deep pie dish.
  6. Whisk eggs, brown sugar, corn syrup, melted butter, and vanilla in a bowl.
  7. Stir in pecans.
  8. Pour filling into crust.
  9. Bake for 50-60 minutes until set.
  10. Cool before serving.
