Gluten-Free Lentil Soup

A hearty and nutritious gluten-free lentil soup packed with protein and fiber. Perfect for a healthy meal.

Ingredients

  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp turmeric
  • Salt and pepper to taste

Instructions

  1. Rinse lentils and set aside.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  4. Stir in cumin and turmeric.
  5. Add lentils and vegetable broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • For extra flavor, add a bay leaf while simmering.
