Gluten-Free One-Pan Lemon Herb Chicken & Veggies

Ingredients

  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken and vegetables on a baking sheet.
  3. Drizzle with olive oil and lemon juice.
  4. Sprinkle with garlic, thyme, rosemary, salt, and pepper.
  5. Toss to coat evenly.
  6. Bake for 25-30 minutes until chicken is cooked through.
  7. Garnish with lemon zest before serving.
