Ingredients

Scale
  • 1 medium cauliflower head, riced (about 3 cups)
  • 1 large egg
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese (for topping)
  • Toppings of your choice (e.g., bell peppers, mushrooms, pepperoni)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rice the cauliflower by pulsing florets in a food processor until finely chopped.
  3. Microwave the riced cauliflower for 4-5 minutes, then let it cool. Squeeze out excess moisture using a clean towel.
  4. In a bowl, mix the cauliflower, egg, mozzarella, Parmesan, oregano, garlic powder, salt, and pepper.
  5. Spread the mixture onto the baking sheet, shaping it into a 10-inch circle or rectangle.
  6. Bake for 20-25 minutes until golden and firm.
  7. Remove from the oven, add pizza sauce, cheese, and toppings.
  8. Bake for another 10 minutes until the cheese is melted and bubbly.
  9. Let it cool for 5 minutes before slicing and serving.

Notes

  • Use a clean kitchen towel to remove as much moisture as possible for a crispier crust.
  • Customize toppings to your preference.
  • Store leftovers in the fridge for up to 2 days.
