- 1/2 tsp baking soda
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 1 cup white chocolate chips
- Black icing for decorating
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Whisk gluten-free flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt in a bowl.
- Cream butter and sugar until light. Add pumpkin puree, egg, and vanilla. Mix well.
- Gradually add dry ingredients to wet ingredients. Stir until combined.
- Fold in white chocolate chips.
- Scoop dough into 1.5-inch balls. Shape into ghost forms on baking sheets.
- Bake for 10-12 minutes until edges are golden.
- Cool completely. Decorate with black icing for eyes and mouth.
