  • 2 cups mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 gluten-free pie crust
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix mashed sweet potatoes, sugars, eggs, milk, butter, vanilla, cinnamon, nutmeg, and salt in a bowl.
  3. Pour the mixture into the gluten-free pie crust.
  4. Bake for 45-50 minutes or until the center is set.
  5. Remove from oven and top with mini marshmallows.
  6. Return to oven for 2-3 minutes to toast the marshmallows.
  7. Let cool before serving.
