Hearty Gluten-Free Beef Stew with Root Vegetables

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups gluten-free beef broth
  • 3 large carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 2 potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp gluten-free flour (for thickening)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef cubes on all sides, then remove and set aside.
  2. In the same pot, sauté onion and garlic until softened, about 3 minutes.
  3. Add beef back to the pot. Pour in beef broth and bring to a simmer.
  4. Stir in carrots, parsnips, potatoes, celery, thyme, and rosemary. Cover and simmer for 1.5 hours or until beef is tender.
  5. Mix gluten-free flour with a little water to make a slurry. Stir into the stew to thicken.
  6. Season with salt and pepper. Cook for another 10 minutes before serving.

Notes

  • For extra flavor, add a bay leaf while simmering.
  • Store leftovers in the fridge for up to 3 days.
  • Freezes well for up to 2 months.
