- 1 whole turkey (12–14 lbs)
- 1/4 cup olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 lemon, quartered
- 1 onion, quartered
- 4 cloves garlic, crushed
- 2 cups gluten-free chicken broth
- Preheat oven to 325°F.
- Remove giblets and neck from turkey. Pat dry with paper towels.
- Mix olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary in a small bowl.
- Rub the spice mixture all over the turkey, including under the skin.
- Stuff the turkey cavity with lemon, onion, and garlic.
- Place turkey on a rack in a roasting pan. Pour broth into the pan.
- Roast for 3 to 3.5 hours, or until internal temperature reaches 165°F in the thickest part of the thigh.
- Let rest for 20 minutes before carving.

- Use a meat thermometer for accurate cooking.
- Baste turkey with pan juices every hour.
- Cover with foil if the skin darkens too quickly.
