Slow Cooker Gluten-Free Pot Roast

A tender and flavorful pot roast made in a slow cooker, perfect for a gluten-free diet.

  • 3 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 4 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth (gluten-free)
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (gluten-free)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Sear the beef chuck roast on all sides until browned, about 4 minutes per side.
  3. Place the roast in the slow cooker.
  4. Add onion, carrots, celery, and garlic around the roast.
  5. In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Pour the mixture over the roast and vegetables.
  7. Cover and cook on low for 8 hours or on high for 5 hours.
  8. Remove the roast, shred or slice, and serve with the vegetables and juices.

Notes

  • Use a gluten-free beef broth and Worcestershire sauce to keep the recipe gluten-free.
  • For extra flavor, deglaze the pan with a bit of broth after searing the roast and add it to the slow cooker.
  • Let the roast rest for 10 minutes before slicing.
