  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/2 cup milk (or dairy-free alternative)
  • 1 tsp vanilla extract
  • 1/4 cup butter (or dairy-free substitute)
  • 1/2 cup gluten-free flour
  • 1/2 cup chopped pecans
  • 1/4 cup coconut sugar
  • 2 tbsp butter (or dairy-free substitute)
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix mashed sweet potatoes, 1/2 cup coconut sugar, eggs, milk, vanilla, and 1/4 cup butter in a bowl.
  3. Spread mixture into a greased baking dish.
  4. Combine gluten-free flour, pecans, 1/4 cup coconut sugar, 2 tbsp butter, and cinnamon for the topping.
  5. Sprinkle topping over the sweet potato mixture.
  6. Bake for 30-35 minutes until golden brown.
  7. Let cool for 10 minutes before serving.
